Stuffed red bell peppers with mushrooms, garlic and herbs. A simple, light dinner which can be served alone or with a side salad to increase the calories. Or, you could serve it with another recipe from this collection!
One tray required.

Preheat the oven to 400 degrees Fahrenheit and line a baking tray with baking paper
Sit the pepper halves onto the tray and rub the insides and outsides with olive oil
Fill the peppers with chopped mushrooms, garlic, onion, parsley, pine nuts, salt and pepper. (I just pile everything in and then give it a stir inside the pepper half)
Add an extra drizzle of olive oil, slip into the oven and bake for about 30-40 minutes or until the peppers are soft and the mushrooms are cooked
Serve alone or with salad
