 4 large portobello mushrooms
 8 tsp olive oil
4 tsp finely chopped thyme leaves
 Salt and pepper
 Salt and pepper
 8 sturdy iceberg lettuce leaves
 1 large, ripe tomato, sliced
 1 avocado, sliced
1

Place a frying pan or griddle over a medium-high heat

2

Rub each mushroom with 2 tsp olive oil, sprinkle with ½ tsp chopped thyme leaves, then sprinkle with salt and pepper (place the seasonings onto the side of the mushrooms which have gills, not the smooth side)

3

Use a microplane or fine grater to grate the garlic over each mushroom (¼ of a garlic clove per mushroom)

4

Place the mushrooms gill-side down onto the hot pan or griddle and cook for about 3 minutes, turn over and cook for a further few minutes until the mushrooms are cooked through

5

Assemble the burgers by piling a cooked mushroom, a slice of tomato and a couple of slices of avocado onto a lettuce leaf and place the other lettuce leaf on top

6

Eat right away to preserve the freshness of the lettuce
