 1 large spaghetti squash
 2 Tbsp olive oil
 Salt and pepper
Filling
1 ½ cups finely chopped brown mushrooms
 1 red onion, finely chopped
 2 garlic cloves, finely chopped
 ¼ cup finely chopped parsley
 4 Tbsp olive oil
 Salt and pepper
1

Preheat the oven to 400 degrees Fahrenheit

2

Cut the spaghetti squash in half, lengthways (so you have two long ovals)

3

Scoop the seeds out of each half with a spoon and discard

4

Rub the cut sides of the squash halves with olive oil and sprinkle with salt and pepper

5

Roast the squash halves cut side down for about 30 minutes or until the insides of the squash halves are becoming soft, but still a little firm, as they will continue to cook when we put them back into the oven with the fillings added

6

Scoop the flesh out of the squash skins and add to a bowl with the mushrooms, onion, garlic, parsley, olive oil, salt and pepper and stir to combine

7

Return the squash filling back to the empty squash halves on the tray and return them to the oven to bake for a further 25 minutes

8

Serve hot or warm
