A chilled, filling breakfast for chocolate lovers (without the sugar or dairy products). Chia seeds provide a lot of fiber and fat, while blueberries are a great source of antioxidants.
6 Tbsp chia seeds
1 Tbsp cocoa powder (unsweetened, plain)
Drop or two of stevia or your preferred natural, sugar-free sweetener (optional)
2 cups unsweetened almond milk
⅔ cup blueberries
3 Tbsp roughly chopped almonds, toasted on a dry pan until golden
1
Divide the chia seeds, cocoa powder, sweetener, almond milk and blueberries between two bowls and combine
2
Sprinkle the toasted almonds over the top (don’t worry if they sink down a bit)
Cover and refrigerate overnight
3
In the morning, simply grab a spoon and eat
