2 cups peas (fresh or frozen, whichever you can source)
10 cups roughly chopped spinach (sounds like a lot, but spinach wilts drastically!)
½ cup fresh mint leaves, finely chopped
4 cups vegetable stock
Salt and pepper
Minted Oil Drizzle
3 Tbsp olive oil
3 Tbsp fresh mint leaves, roughly chopped and bruised between your fingers
1
First, combine the olive oil and mint in a small bowl or pouring jug and leave to steep as the soup cooks
2
Add the olive oil to a large saucepan or stock pot over a medium heat
3
Add the onion and garlic, stir as the onion softens
4
Add the peas, spinach and mint, stir as the spinach wilts
5
Add the stock, salt and pepper and stir to combine
6
Cover the pot and simmer the soup for about 30 minutes or until everything is soft and wilted
7
Use an immersion blender to blend the soup until super smooth
8
Drizzle a little of the minted olive oil over each bowl right before serving
