Cashew And Lemon No-Bake Energy Balls

Another grab-and-go recipe for a quick energy bite in the morning. Great for eating before a morning workout session or during an early commute.

Yields12 Servings
Total Time10 mins
 3 cups raw cashews
 ½ cup ground almonds
Few drops of stevia or your go-to sugar-free sweetener (optional)
Juice and finely grated zest of 1 lemon
 ⅓ cup coconut oil
1

Line a baking tray with baking paper

2

Place all ingredients into a food processor and pulse until a sticky, wet-sand mixture forms. If you find that it’s too dry, you could add a dash more lemon juice. If it’s too wet, add a few more cashews and oats, but make 26 balls instead of 24 to make sure the macronutrient information remains accurate

3

Shape the mixture into balls and set onto your prepared tray and slip into the fridge to set for a few hours

4

Transfer the balls to an airtight container and store in the fridge
