A dish which looks classy but is actually super simple to make. All you need is one pot to cook the quinoa. The avocado skins are used as bowls. While quinoa is a high-carb food, it also contains lots of fiber, and we only use a small portion per serving to keep the net carbs down.
Place ⅓ cup of dry quinoa, ⅓ cup of water and a pinch of salt in a saucepan over a medium heat, cover and simmer until the water has evaporated and quinoa is tender. Leave to cool
Scoop the avocado into the saucepan with the cooked, cooled quinoa, add the onion, sunflower seeds, olive oil, lemon juice, salt and pepper and mash everything together with a fork. Aim for some chunky pieces of avocado and some smooth bits
Scoop the avocado-quinoa mixture back into the empty avocado skins
Serve with an extra sprinkling of seasoning
