Cauliflower And Cannellini Bean Hash Browns

If you’ve got cauliflower lying around in the fridge and you want to use it up while it’s fresh, make these easy fritters and keep them in the fridge to grab and eat for breakfast during the week. If you’ve got extra time in the morning, heat them up and eat with half an avocado.

Note: we cook the hash browns in the oven so you don’t have to stand by a hot stove.

Yields4 Servings
Total Time40 mins
 ½ onion
 2 garlic cloves
 3 cups cauliflower florets
 1 cup cooked cannellini beans
 ½ cup parsley
 4 Tbsp olive oil
 Salt and pepper
 3 Tbsp roughly chopped scallions
1

Preheat the oven to 400 degrees Fahrenheit and line a baking tray with baking paper

2

Place all ingredients into a food processor and pulse until you reach a chunky, thick mixture. There should be a mixture of larger and smaller pieces of onion and cauliflower

3

Shape the mixture into 12 hashbrowns (any flat shape is fine. I just roll them into balls then flatten them down) and lay them on the tray

4

Bake the hash browns for 15 minutes, then turn over and bake the other side for a further 10 minutes until both sides are golden

5

Leave to cool before storing in an airtight container in the fridge until needed
