A fiber-rich granola of nuts, seeds and cinnamon, toasted with coconut oil. Granola can be served over coconut yogurt or berries, with a little almond or hemp milk.
Yields20 ServingsPrep Time30 minsTotal Time1 hr 30 mins
5 Tbsp coconut oil
1 cup roughly chopped almonds
1 cup roughly chopped walnuts
½ cup roughly chopped pecans
½ cup ground flaxseed
½ cup sesame seeds
¾ cup pumpkin seeds
1 cup unsweetened coconut flakes
2 heaped tsp ground cinnamon
1 tsp sea salt
1
Place a very large saute pan over a medium heat and add the coconut oil
2
Check to see if the coconut is hot and melted (drop a piece of nut into the oil and it should gently sizzle but not spit)
3
Add all of the ingredients to the pan and give the mixture a thorough stir to combine
4
Keep stirring every minute or so as the granola toasts and becomes fragrant. You’re looking for a light golden color. The stirring process is important as it ensures the nuts and seeds toast evenly, without burning
5
Leave the granola to cool completely before storing in an airtight container
